Gaskets
One of the best ways to ensure proper cooling is with gaskets. What appears to be harmless seals around the door can be the difference between spoiled and fresh produce.
If there are damaged seals on your commercial freezer (i.e., tears, holes, missing gaskets), your unit is losing the cool air faster than it can replenish it. All you have to do is replace the seal with a new door gasket, and your refrigeration unit should maintain the proper temperature.
